This is the second Chimay beer I have reviewed.  The first was the White.  You can check out the review here: Glass Fetish – Beer #34

Chimay Première is a Belgian Dubbel style beer.  What is Dubbel style you ask?  It is a Trappist naming convention.  The Dubbel is generally a rich, malty, and spicy beer that is on the darker coloured side.  It has been brewed since the middle ages but is thought to have been revived by the Westmalle Abbey monks in the 1800’s.

About the Beer – It poured a lovely dark cider colour.  The head was huge and lasted till the beer was done.  The aroma was excellent.  Lots of sweet spice and a sort of musty fruitiness.  The first sip was an explosion of toasted malts, toffee, and some sweetness.  This was followed by some spicy coriander, pepper, and maybe a bit of cinnamon. There is some definite pepper in the aftertaste.  The alcohol is well hidden.  There is lots of carbonation in this beer yet it goes down smooth as can be!

Would I Drink it Again? – Yes, Yes, Yes, this is a great beer.  Now if I could only get my hands on the Chimay Blue!
